The Batch Size Math

Every size decision starts here. One medium head of green cabbage weighs about 2 lbs (900g). Size Mistakes We See Most Often

Buying 1L when you eat sauerkraut every week: you'll be fermenting constantly. Buying 10L when you've never fermented before: too much of an investment for an uncertain habit. Filling the crock to the very top: brine overflows during peak CO2 production on days 2–4 and makes a mess. Leaving the crock less than half full: the brine-to-vegetable ratio goes off and the ferment takes much longer.
